Ingredients

  • 12 oz pasta (linguine or spaghetti)

  • 1 cup ricotta cheese

  • 1 lemon (zest and juice)

  • 1/4 cup grated Parmesan cheese

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • Salt and black pepper to taste

  • 1/4 cup reserved pasta water

  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Reserve 1/4 cup of pasta water and drain.

  2. In a bowl, mix ricotta, lemon zest, lemon juice, Parmesan, salt, and pepper until smooth.

  3. In a skillet, heat olive oil and sauté garlic until fragrant.

  4. Add the cooked pasta and reserved water to the skillet. Remove from heat.
