  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 2 cups milk
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • Optional: Chopped parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess grease and set aside.
  2. In the same pot, melt butter and sauté the onion and garlic until soft and fragrant.
  3. Stir in the flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in the chicken or beef broth and bring to a gentle simmer.
  5. Add the diced potatoes, salt, black pepper, and paprika. Cover and cook for 15-20 minutes, or until potatoes are tender.
  6. Stir in the cooked ground beef, milk, and heavy cream. Simmer for another 5-7 minutes.
  7. Add shredded cheddar cheese, stirring until melted and smooth.
  8. Serve hot, garnished with parsley if desired.

  • For a thicker soup, mash some of the potatoes or add extra flour.
