8 oz fettuccine or pasta of choice
1 tbsp olive oil
2 salmon fillets (skinless)
Salt and pepper to taste
2 tbsp butter
3 garlic cloves, minced
1 small onion, finely chopped
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup pasta water (reserved)
1 tsp lemon zest
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
Cook pasta according to package instructions. Reserve ½ cup pasta water. Drain and set aside.
Season salmon with salt and pepper. Heat olive oil in a skillet over medium heat. Cook salmon 4-5 minutes per side until fully cooked. Remove and flake into chunks.
In the same skillet, melt butter. Add onion and garlic; sauté 2-3 minutes until soft.
Stir in heavy cream, Parmesan, lemon zest, and lemon juice. Simmer until slightly thickened.
Add pasta, flaked salmon, and pasta water. Toss to coat evenly.
Garnish with parsley and serve hot.
Use smoked salmon for extra flavor.
