Ingredients

Scale
  • 8 oz fettuccine or pasta of choice

  • 1 tbsp olive oil

  • 2 salmon fillets (skinless)

  • Salt and pepper to taste

  • 2 tbsp butter

  • 3 garlic cloves, minced

  • 1 small onion, finely chopped

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ cup pasta water (reserved)

  • 1 tsp lemon zest

  • 1 tbsp lemon juice

  • 2 tbsp fresh parsley, chopped

Instructions

  • Cook pasta according to package instructions. Reserve ½ cup pasta water. Drain and set aside.

  • Season salmon with salt and pepper. Heat olive oil in a skillet over medium heat. Cook salmon 4-5 minutes per side until fully cooked. Remove and flake into chunks.

  • In the same skillet, melt butter. Add onion and garlic; sauté 2-3 minutes until soft.

  • Stir in heavy cream, Parmesan, lemon zest, and lemon juice. Simmer until slightly thickened.

  • Add pasta, flaked salmon, and pasta water. Toss to coat evenly.

  • Garnish with parsley and serve hot.

Notes

  • Use smoked salmon for extra flavor.

  • Add spinach or peas for more veggies.

  • Light cream or milk can be substituted for a lighter version.
