This creamy white cheddar chicken pasta recipe is a hearty dish featuring tender chicken, pasta, and a rich white cheddar cheese sauce.

  • 12 oz pasta (penne, fettuccine, or rotini)
  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups shredded white cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tsp minced garlic
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley or chives (for garnish)

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and paprika, then cook until golden and fully cooked. Remove and set aside.
  • In the same skillet, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.
  • Stir in flour and cook for 1-2 minutes to form a roux. Gradually whisk in milk and heavy cream, stirring constantly until smooth and thickened.
  • Reduce heat to low and add shredded white cheddar and Parmesan cheese. Stir until melted and creamy.
  • Season the sauce with onion powder, salt, and pepper. Add the cooked chicken and pasta to the skillet, tossing to coat evenly.
  • Serve hot, garnished with parsley or chives.
