  • 1 tablespoon minced garlic
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 2 pounds cooked chicken, cubed or shredded
  • 32 ounces low sodium chicken broth
  • 4 cans (15.5 ounces each) great northern white beans, drained and rinsed
  • 3 cans (4 ounces each) diced green chiles, drained
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • ½ teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • ½ cup fresh cilantro, chopped
  • 8 ounces low fat cream cheese, cubed
  • 1 cup heavy cream

Instructions

  • In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until softened.
  • Stir in the lime juice, cumin, oregano, cayenne pepper, chili powder, salt, and pepper.
  • Add the chicken broth, shredded chicken, white beans, and green chiles. Bring to a simmer.
  • Reduce heat and add the cream cheese. Stir until melted and smooth.
  • Pour in the heavy cream and continue to simmer until the chili is thickened.
  • Stir in fresh cilantro before serving.
  • Serve hot with optional toppings like tortilla strips, jalapeños, additional cilantro, shredded cheese, sour cream, or avocado slices.
