2 large boneless, skinless chicken breasts
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (preferably panko)
1 tsp garlic powder
Salt and pepper to taste
2 tbsp olive oil
3 tbsp butter
4 garlic cloves, minced
1 cup chicken broth
1 cup heavy cream
1/4 cup grated Parmesan (for sauce)
1 tsp Italian seasoning
Fresh parsley for garnish (optional)
Slice chicken breasts in half lengthwise to make 4 thin cutlets.
In a bowl, mix Parmesan, breadcrumbs, garlic powder, salt, and pepper.
Dredge chicken in the mixture, pressing to coat well.
