  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 (28 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)

 

  • 2 cups cooked pasta (rotini, penne, or your choice)

Instructions

  • Add chicken breasts, chicken broth, crushed tomatoes, onion, garlic, basil, oregano, salt, pepper, and red pepper flakes to the slow cooker.
  • Cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is tender.
  • Shred the chicken using two forks.
  • Stir in heavy cream, Parmesan cheese, and mozzarella cheese until melted and combined.
  • Add cooked pasta and stir well. Let cook for another 10-15 minutes.

 

  • Serve hot, garnished with extra Parmesan cheese and fresh basil if desired.
