  • 1 green bell pepper, diced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1/2 tsp ground chipotle
  • 1/2 tsp cayenne pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp liquid smoke (optional)
  • 14 oz kidney beans, drained and rinsed
  • 28 oz diced tomatoes, undrained
  • 15 oz tomato sauce

Instructions

  • Brown the ground beef in a skillet over medium heat, seasoning with salt and pepper.
  • Transfer the beef to the crockpot. Add diced bell pepper, onion, and garlic.
  • Stir in chili powder, cumin, chipotle, cayenne, Worcestershire sauce, and liquid smoke.
  • Add the kidney beans, diced tomatoes, and tomato sauce. Mix well.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  • Serve hot, garnished with your favorite toppings.

Notes

  • For a leaner chili, substitute ground turkey for beef.
  • Adjust the cayenne pepper for desired heat level.
