This Crockpot Lasagna recipe is a perfect slow-cooker meal with layers of rich ground beef, flavorful marinara sauce, and creamy ricotta cheese, all topped with gooey mozzarella. It's an easy and delicious Italian dish that’s great for busy weeknights or meal prep.

  • 1 pound ground beef
  • 1 sweet onion, minced
  • 5 cloves garlic, minced and divided
  • 24 ounces marinara sauce
  • 6 ounces tomato paste
  • 1 teaspoon dried Italian seasoning
  • 12 ounces lasagna noodles
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella, divided
  • 1 cup shredded Parmesan
  • 1/4 cup fresh chopped parsley
  • 1 teaspoon salt

Instructions

  • In a skillet, cook ground beef and minced onion until beef is browned. Add half the garlic, marinara sauce, tomato paste, and Italian seasoning. Simmer for 10 minutes.
  • In a bowl, mix ricotta cheese, remaining garlic, 1 cup mozzarella, Parmesan, parsley, and salt.
  • Spread a layer of meat sauce on the bottom of the crockpot. Add a layer of uncooked lasagna noodles, breaking to fit as needed. Spread some ricotta mixture over the noodles. Repeat layers, ending with meat sauce on top.
  • Sprinkle remaining mozzarella over the top.
  • Cover and cook on low for 4-6 hours or until noodles are tender.
  • Let lasagna rest for 10 minutes before serving.

Notes

  • For a vegetarian option, substitute the ground beef with sautéed mushrooms or a meat substitute.
  • Serve with a side salad or garlic bread for a complete meal.
