  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup rainbow sprinkles

Instructions

  • Prepare the Oven and Baking Sheets: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cream Butter and Sugar: In a large bowl, beat the softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  • Combine Ingredients: Gradually add dry ingredients to the wet mixture, mixing until just combined. Fold in sprinkles, being careful not to overmix.
  • Form the Cookies: Scoop large spoonfuls of dough, roll into balls, and place on prepared baking sheets, spacing them 2 inches apart. Flatten slightly.
  • Bake: Bake for 10-12 minutes, or until edges are lightly golden but centers are still soft. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For softer cookies, slightly underbake and let them cool on the baking sheet.
  • Store cookies in an airtight container at room temperature for up to 3 days.
