Main Ingredients:
8 skinless, boneless chicken thighs, cut into cubes
1 medium onion, cubed
Marinade Ingredients:
1 medium onion, finely diced
2 cloves garlic, crushed
1 tablespoon fresh ginger, grated
2 tablespoons Madras curry powder
2 teaspoons salt
1/4 cup red wine vinegar
2 cups dried apricots
1/2 cup smooth apricot jam
1/4 cup olive oil
2 tablespoons Mrs. Ball’s Chutney
2 bay leaves
Instructions
In a bowl, mix the diced onion, crushed garlic, grated ginger, curry powder, salt, red wine vinegar, apricots, apricot jam, olive oil, chutney, and bay leaves to make the marinade.
Add the chicken cubes and cubed onion to the marinade. Ensure all pieces are well-coated.
Cover and refrigerate for at least 2 hours, preferably overnight.
Preheat the grill to medium-high heat.
Thread the chicken and onion onto skewers.
Grill the sosaties for about 10-12 minutes, turning frequently until the chicken is cooked through and slightly charred.
Serve hot with your choice of sides.
Notes
For a richer flavor, marinate the chicken overnight.
Can be served with rice or flatbread for a complete meal.
