Main Ingredients:

  • 8 skinless, boneless chicken thighs, cut into cubes
  • 1 medium onion, cubed

Marinade Ingredients:

  • 1 medium onion, finely diced
  • 2 cloves garlic, crushed
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons Madras curry powder
  • 2 teaspoons salt
  • 1/4 cup red wine vinegar
  • 2 cups dried apricots
  • 1/2 cup smooth apricot jam
  • 1/4 cup olive oil
  • 2 tablespoons Mrs. Ball’s Chutney
  • 2 bay leaves

Instructions

  • In a bowl, mix the diced onion, crushed garlic, grated ginger, curry powder, salt, red wine vinegar, apricots, apricot jam, olive oil, chutney, and bay leaves to make the marinade.
  • Add the chicken cubes and cubed onion to the marinade. Ensure all pieces are well-coated.
  • Cover and refrigerate for at least 2 hours, preferably overnight.
  • Preheat the grill to medium-high heat.
  • Thread the chicken and onion onto skewers.
  • Grill the sosaties for about 10-12 minutes, turning frequently until the chicken is cooked through and slightly charred.
  • Serve hot with your choice of sides.

Notes

  • For a richer flavor, marinate the chicken overnight.
  • Can be served with rice or flatbread for a complete meal.
