  • 1 lb boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 2 cups cooked pasta (penne or spaghetti recommended)
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with Italian seasoning, salt, and pepper.
  2. Heat 2 tbsp olive oil in a skillet over medium heat and cook chicken for 6-8 minutes per side until fully cooked. Set aside to rest, then slice.
  3. In the same skillet, add remaining olive oil, minced garlic, and halved cherry tomatoes. Cook for 3-4 minutes until tomatoes are soft.
  4. Stir in balsamic vinegar, chopped basil, and cooked pasta. Toss to combine.
  5. Add sliced chicken back to the skillet and mix well.
  6. Sprinkle with grated Parmesan cheese before serving.
