4 salmon fillets, skinless
1 cup fresh spinach (chopped)
½ cup cream cheese
¼ cup grated Parmesan cheese
1 garlic clove, minced
Salt and pepper to taste
1 tbsp olive oil
Lemon wedges (optional, for serving)
Preheat oven to 375°F (190°C).
In a bowl, mix spinach, cream cheese, Parmesan, garlic, salt, and pepper.
Slice a pocket in the side of each salmon fillet.
Stuff each fillet with the spinach mixture.
Heat olive oil in a skillet over medium heat.
Sear salmon for 2–3 minutes per side until golden.
Transfer skillet to oven and bake for 10–12 minutes.
Serve with lemon wedges if desired.
