This delicious Mississippi Mud Potatoes recipe is a rich and creamy Southern side dish loaded with tender potatoes, melted cheese, crispy bacon, and savory seasoning. Perfect for potlucks, holiday dinners, or weeknight comfort meals.
2 lbs red potatoes, diced
1 ½ cups sour cream
1 ½ cups shredded cheddar cheese
1 (1 oz) packet ranch seasoning
½ tsp garlic powder
½ tsp onion powder
1 lb bacon, cooked and crumbled
Salt and pepper to taste
Optional: chopped green onions for garnish
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine diced potatoes, sour cream, cheese, ranch seasoning, garlic powder, and onion powder.
Fold in the cooked and crumbled bacon.
Transfer the mixture to a greased 9x13 inch baking dish.
Bake uncovered for 40–45 minutes or until the potatoes are tender and the top is golden and bubbly.
