  • 1 packet taco seasoning (or homemade)
  • 1/4 cup water
  • 2 cups cooked rice (white, brown, or cilantro lime rice)
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar or Mexican cheese blend
  • 1 avocado, diced
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • Optional: jalapeños, guacamole, hot sauce

Instructions

  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
