  • 1 lb ground beef
  • 2 cups diced potatoes
  • 1 cup diced carrots

  • 2 cups milk
  • 2 cups shredded cheddar cheese

  • 1/4 cup flour
  • Salt and pepper to taste

Instructions

  • In a large pot, cook ground beef over medium heat until browned. Drain excess fat and set aside.
  • In the same pot, melt butter and sauté onions and carrots until softened.
  • Add flour to the pot and stir for 1 minute, then gradually add chicken broth while stirring.
  • Add diced potatoes and bring to a boil, then reduce heat and simmer for 10-15 minutes until potatoes are tender.
  • Stir in milk and cheddar cheese, cooking until cheese is melted and soup is creamy.
  • Add the cooked ground beef back to the pot. Season with salt and pepper to taste.
