  • 12 oz spaghetti or fettuccine
  • 2 cups cooked, shredded chicken
  • 2 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • 1/4 tsp thyme
  • 1/4 cup breadcrumbs (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Cook pasta according to package directions until al dente. Drain and set aside.
  • In a large skillet, melt butter over medium heat. Sauté onions and garlic until soft, then add mushrooms and cook until tender.
  • Stir in the cream of mushroom soup, chicken broth, and heavy cream. Season with thyme, salt, and pepper. Simmer for 5 minutes until the sauce thickens slightly.
  • Add the shredded chicken and cooked pasta to the skillet. Toss to coat everything in the sauce.
  • Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle with Parmesan and mozzarella cheese, and breadcrumbs if using.
  • Bake for 20-25 minutes, until the cheese is melted and bubbly. Serve hot.

  • You can substitute turkey or rotisserie chicken for the cooked chicken.
