  • 2 large chicken breasts
  • 2 cans (15 oz each) great northern beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 3 cups chicken broth
  • 1 block (8 oz) cream cheese, softened
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, fresh cilantro

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the white beans, corn, green chiles, chicken broth, and seasonings (garlic powder, onion powder, cumin, chili powder, paprika, salt, and pepper).
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove the chicken breasts, shred them with two forks, and return to the crockpot.
  5. Stir in the softened cream cheese until fully melted and combined.
  6. Serve hot with your favorite toppings, such as shredded cheese, sour cream, or fresh cilantro.

Notes

  • For a thicker chili, mash some of the beans before adding them to the crockpot.
  • This recipe freezes well. Let it cool completely before storing in airtight containers.
