Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1/4 tsp salt
  • Extra sugar for rolling

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and almond extract (if using) until smooth.
  • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Roll dough into 1-inch balls, then roll each ball in sugar to coat.
  • Place dough balls on prepared baking sheets, spacing them about 2 inches apart. Lightly flatten each ball with the bottom of a glass.
  • Bake for 8–10 minutes, or until the edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a festive touch, add colored sprinkles or colored sugar on top before baking.
  • For softer cookies, do not over-bake; they should be just set when removed from the oven.
