  • 8 oz tomato sauce
  • 28 oz canned diced tomatoes
  • 1 cup chicken broth
  • 16 oz can red kidney beans, drained
  • 16 oz navy beans, drained
  • 2 bay leaves
  • 2 tbsp chipotle chili powder
  • 3 tsp paprika
  • 1 1/2 tsp oregano
  • 3 tsp cumin
  • 1 tbsp kosher salt
  • 2 tbsp minced fresh cilantro
  • Juice of 1 large lime

Instructions

  • Heat canola oil in a large pot over medium heat.
  • Add diced onion, bell peppers, and jalapenos; sauté until softened.
  • Stir in minced garlic and cook until fragrant.
  • Add the ground turkey and cook until browned, breaking it up as it cooks.
  • Stir in the tomato sauce, diced tomatoes, and chicken broth.
  • Add the kidney beans, navy beans, bay leaves, chipotle chili powder, paprika, oregano, cumin, and kosher salt.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 30-45 minutes, stirring occasionally.
  • Remove bay leaves, stir in cilantro, and squeeze in lime juice.
