  • 4 cups yellow squash, sliced

  • 1 small onion, chopped

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 1/2 cup mayonnaise

  • 1 cup crushed crackers (such as Ritz)

  • 2 eggs, beaten

  • 2 tbsp butter, melted

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

Instructions

  • Preheat oven to 350°F (175°C). Grease a baking dish.

  • In a skillet over medium heat, sauté squash and onion until tender. Drain any excess liquid.

  • In a large bowl, mix squash, cheddar cheese, sour cream, mayonnaise, eggs, garlic powder, salt, and pepper.

  • Pour mixture into the prepared baking dish.

  • In a small bowl, mix melted butter with crushed crackers, then sprinkle over the casserole.

  • Bake for 25–30 minutes or until golden brown and bubbly.

 

  • Let it cool slightly before serving.
