Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 1/2 cup cornstarch

  • 2 eggs, beaten

  • 1 cup panko breadcrumbs

  • Oil for frying

For the Firecracker Sauce:

  • 1/3 cup mayonnaise

  • 2 tbsp sweet chili sauce

  • 1 tbsp sriracha

  • 1 tbsp honey

  • 1 tsp rice vinegar

Instructions

  1. Pat shrimp dry. Dredge in cornstarch, dip in egg, then coat with panko.

  2. Heat oil in a deep pan over medium-high heat.

  3. Fry shrimp in batches until golden and crispy, about 2–3 minutes. Drain on paper towels.

  4. In a bowl, whisk together all sauce ingredients.

  5. Toss hot shrimp in the firecracker sauce until evenly coated.

  6. Serve immediately, garnished with green onions or sesame seeds if desired.

Notes

  • Adjust sriracha for more or less heat.

  • Use air fryer for a lighter version.
