  • 6 bone-in, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 8 oz mushrooms, sliced
  • 1 cup dry white wine
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a large, oven-safe pot over medium heat.
  • Season chicken thighs with salt and pepper, then brown them on both sides in the pot. Remove and set aside.
  • In the same pot, sauté onions and garlic until soft.
  • Add carrots and mushrooms, cooking for 3-4 minutes.
  • Stir in white wine, scraping up any browned bits from the bottom of the pot. Let it reduce by half.
  • Add chicken broth, Dijon mustard, and thyme, stirring to combine.
  • Return the chicken to the pot, cover, and bake for 45 minutes.
  • Stir in heavy cream and bake uncovered for an additional 10 minutes.
  • Garnish with fresh parsley and serve hot.

Notes

  • For added richness, you can swap heavy cream for crème fraîche.
  • This dish pairs wonderfully with mashed potatoes or a crusty baguette.
  • Leftovers can be stored in the fridge for up to 3 days.
