6 bone-in, skinless chicken thighs
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
4 medium carrots, sliced
8 oz mushrooms, sliced
1 cup dry white wine
1 1/2 cups chicken broth
1/2 cup heavy cream
2 tbsp Dijon mustard
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Preheat oven to 350°F (175°C).
Heat olive oil in a large, oven-safe pot over medium heat.
Season chicken thighs with salt and pepper, then brown them on both sides in the pot. Remove and set aside.
In the same pot, sauté onions and garlic until soft.
Add carrots and mushrooms, cooking for 3-4 minutes.
Stir in white wine, scraping up any browned bits from the bottom of the pot. Let it reduce by half.
Add chicken broth, Dijon mustard, and thyme, stirring to combine.
Return the chicken to the pot, cover, and bake for 45 minutes.
Stir in heavy cream and bake uncovered for an additional 10 minutes.
Garnish with fresh parsley and serve hot.
Notes
For added richness, you can swap heavy cream for crème fraîche.
This dish pairs wonderfully with mashed potatoes or a crusty baguette.
