  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup beef broth (or vegetable broth for vegetarian option)
  • 1 cup shredded Gruyere cheese (or Swiss cheese)
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Bake potatoes for 50-60 minutes until tender.
  2. In a skillet, heat butter and olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring often, until onions are caramelized (about 25-30 minutes).
  3. Deglaze the pan with beef broth, stirring until the liquid evaporates. Set caramelized onions aside.
  4. Slice the top off each baked potato and scoop out the flesh, leaving a shell.
  5. Mix the potato flesh with half of the cheese and half of the caramelized onions. Spoon the mixture back into the potato shells.
  6. Top with remaining caramelized onions and cheese.
  7. Bake for an additional 10-15 minutes, until cheese is melted and bubbly. Garnish with parsley if desired. Serve warm.
