Ingredients

Scale
  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts (cubed)
  • Salt and pepper to taste
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup parmesan cheese (grated)
  • 1 tsp Italian seasoning
  • 1 package (16 oz) potato gnocchi
  • 1 cup spinach (optional)
  • ¼ tsp red pepper flakes (optional)

Instructions

  • Add minced garlic and sauté until fragrant.
  • Pour in chicken broth and heavy cream, stirring to combine.
  • Stir in parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2 minutes.
  • Add gnocchi to the skillet, cover, and cook for 5-7 minutes until soft and tender.
  • Stir in spinach (if using) and cook until wilted.
  • Serve warm, garnished with extra parmesan and fresh parsley if desired.

Notes

  • Use pre-cooked rotisserie chicken for an even faster meal.
  • Substitute half-and-half for a lighter version.
