This Garlic Mushroom Pasta recipe is a creamy, comforting dish with sautéed mushrooms, garlic, and pasta coated in a luscious sauce.

Ingredients

  • 12 oz spaghetti or fettuccine
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 12 oz mushrooms (sliced, any variety)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pasta water (reserved)
  • 1 tsp dried thyme or parsley
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions

  • Cook pasta according to package instructions. Reserve 1/4 cup pasta water before draining.
  • Heat olive oil and butter in a large skillet over medium heat. Add mushrooms and cook until browned and softened, about 5–7 minutes.
  • Add garlic and sauté until fragrant, about 1 minute.
  • Stir in heavy cream, Parmesan cheese, and dried thyme. Simmer for 2–3 minutes until sauce thickens.
  • Add cooked pasta to the skillet and toss to coat. Use reserved pasta water to adjust sauce consistency if needed.
  • Season with salt and pepper to taste. Garnish with fresh parsley and serve warm.

Notes

  • For a vegan version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
  • Add spinach or peas for extra veggies.
  • Use gluten-free pasta if needed.
