These classic Gingerbread Cookies are full of warm spices and deep molasses flavor, perfect for holiday baking. Soft and chewy with just the right amount of spice, these cookies are easy to cut out and decorate, making them ideal for festive gatherings or a cozy day of baking with family.

  • 3 cups all-purpose flour
  • 3/4 cup brown sugar, packed
  • 3/4 cup unsalted butter, softened
  • 2/3 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  • In a large bowl, cream together brown sugar and butter until fluffy. Add molasses, egg, and vanilla extract, and mix well.
  • In a separate bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture, mixing until just combined.
  • Divide dough into two disks, wrap in plastic, and refrigerate for 1 hour.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll out dough on a floured surface to 1/4-inch thickness. Use cookie cutters to cut shapes, then place on baking sheets.
  • Bake for 8-10 minutes or until edges are set. Let cool before decorating.

Notes

For soft cookies, roll the dough slightly thicker. Decorate with royal icing or dust with powdered sugar for a festive touch. Store in an airtight container for up to 1 week.
