Ingredients

  • 2 cups cooked rice or quinoa

  • 1/2 cup diced red onion

  • 1/2 cup diced tomatoes

  • 1/4 cup chopped cilantro

  • Juice of 1 lime

Creamy Sauce:

  • 1/2 cup Greek yogurt or sour cream

  • 1 tbsp lime juice

  • 1 tsp hot sauce (optional)

  • 1 clove garlic, minced

  • Salt to taste

Instructions

  1. Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Grill or sauté 2–3 minutes per side until opaque.
