1 lb large shrimp, peeled and deveined

2 cups cooked rice or quinoa
1 avocado, sliced
1 cup corn (fresh or grilled)
1/2 cup diced red onion
1/2 cup diced tomatoes
1/4 cup chopped cilantro
Juice of 1 lime
Creamy Sauce:
1/2 cup Greek yogurt or sour cream
1 tbsp lime juice
