Ingredients

  • 1 pound ground beef
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 3 cups sweet potatoes, cubed (about 2 medium-sized potatoes)
  • 2 tablespoons homemade taco seasoning (or 1 packet store-bought)
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, seeded and diced
  • 1 cup shredded cheese (optional)
  • Cilantro, avocado, and sour cream, for serving

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
  • Stir in the sweet potatoes, taco seasoning, and water. Cover and cook for 10-15 minutes, or until the sweet potatoes are tender.
  • Add the frozen corn and diced poblano pepper. Cook for an additional 5 minutes.
  • If using, sprinkle shredded cheese over the skillet. Cover and cook until the cheese is melted.
  • Serve hot, garnished with cilantro, avocado, and sour cream.

Notes

  • You can substitute ground beef with ground turkey or chicken.
  • Adjust the spice level by using more or less taco seasoning.
  • For a dairy-free option, omit the cheese and sour cream.
