  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes with green chilies (e.g., Rotel)
  • 2 cups beef broth
  • 1 cup enchilada sauce (red)
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, tortilla strips, cilantro

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess grease.
  2. Add diced onions and minced garlic to the pot, cooking until softened, about 2–3 minutes.
  3. Stir in black beans, corn, diced tomatoes with green chilies, beef broth, enchilada sauce, chili powder, cumin, smoked paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low and simmer for 15–20 minutes to allow flavors to blend.
  5. Serve hot with your favorite toppings such as shredded cheese, sour cream, tortilla strips, and cilantro.
