  • 1 pound ground beef
  • 1 yellow onion, finely chopped
  • 1 tablespoon taco seasoning
  • 2 cups enchilada sauce
  • 8 enchilada-sized tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  • Preheat oven to 375°F (190°C).
  • Cook ground beef and onion in a skillet over medium heat until beef is browned and onion is soft.
  • Add taco seasoning to the beef mixture and stir well.
  • Spread 1/2 cup of enchilada sauce on the bottom of a baking dish.
  • Fill each tortilla with the beef mixture and a sprinkle of both cheeses.
  • Roll up tortillas and place seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  • Bake for 20-25 minutes until cheese is melted and bubbly.
