2 lbs boneless, skinless chicken thighs
1 cup pineapple juice
½ cup soy sauce
¼ cup brown sugar
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp cornstarch (optional, for thickening)
Sliced green onions and sesame seeds (for garnish)
Marinate the Chicken: In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, sesame oil, and rice vinegar. Add the chicken and marinate for at least 2 hours or overnight for best flavor.
