This easy-to-make dish is perfect for BBQs, weeknight dinners, or summer gatherings. Serve with rice or grilled vegetables for a complete island-style meal.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs

  • 1 cup pineapple juice

  • ½ cup soy sauce

  • ¼ cup brown sugar

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tsp cornstarch (optional, for thickening)

  • Sliced green onions and sesame seeds (for garnish)

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, sesame oil, and rice vinegar. Add the chicken and marinate for at least 2 hours or overnight for best flavor.

  2. Prepare the Grill: Preheat grill to medium-high heat. Oil the grates to prevent sticking.

  3. Grill the Chicken: Remove chicken from the marinade. Grill 5–7 minutes per side or until fully cooked and slightly charred.

  4. Optional Glaze: Simmer leftover marinade in a small saucepan. Add cornstarch slurry to thicken and use as glaze.

  5. Serve: Garnish with green onions and sesame seeds. Serve with steamed rice or grilled pineapple slices.

Notes

  • You can also cook the chicken in a skillet or bake it at 400°F (200°C) for 25–30 minutes.

  • Add chili flakes to the marinade for a spicy kick.

  • Works well with chicken breasts, tofu, or even salmon.
