  • 2 boneless, skinless chicken breasts, cubed
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup low-sodium chicken broth
  • Juice of 1/2 lemon

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add cubed chicken and cook for 5–7 minutes until golden brown. Remove and set aside.
  • In the same skillet, add garlic, zucchini, bell pepper, broccoli, and carrot. Sauté for 3–4 minutes.
  • Return chicken to the skillet, season with salt, pepper, paprika, oregano, and red pepper flakes.
