  • 4 medium potatoes, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 medium onion, chopped
  • 1 cup frozen corn
  • 1 cup beef broth
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  • Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess grease.
  • Add the cooked ground beef, potatoes, kidney beans, pinto beans, diced tomatoes, tomato sauce, onion, corn, and garlic to the crockpot.
  • Pour in the beef broth and season with chili powder, smoked paprika, cumin, salt, and pepper. Stir to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  • Taste and adjust seasonings as needed before serving.
