  • 1 cup (240g) active sourdough starter

  • 1 ½ cups (360ml) warm water

  • 4 cups (480g) bread flour

  • 1 ½ tsp salt

Instructions

  1. In a large bowl, mix the sourdough starter and warm water.

  2. Add the flour and salt. Mix until a shaggy dough forms.

  3. Cover and let rest for 30 minutes (autolyse).

  4. Perform 4 sets of stretch and folds every 30 minutes over 2 hours.

  5. Let the dough rise until doubled, 4–6 hours at room temp.

  6. Shape the dough and place into a floured proofing basket.

  7. Cover and refrigerate overnight (8–12 hours) for cold proofing.

  8. Preheat oven to 475°F (245°C) with Dutch oven inside.

  9. Score the dough and bake covered for 20 minutes.

  10. Remove lid and bake another 20–25 minutes until golden brown.

  11. Cool completely before slicing.
