  • Main Ingredients:
    • 3 pounds chuck roast, trimmed and cut into 2-inch pieces
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1 tablespoon olive oil
    • 1 medium onion, thinly sliced
    • 3 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • ½ teaspoon red pepper flakes
    • 1 cup beef broth, low sodium
    • ½ cup Italian salad dressing
    • ½ cup pepperoncini, sliced, plus 2 tablespoons of the brine
    • 6 French rolls or hoagie buns
  • Optional Ingredients:
    • 1 cup giardiniera, drained and chopped
    • Provolone cheese, sliced

Instructions

  • Season the chuck roast with salt and black pepper.
  • Set Instant Pot to sauté mode, add olive oil, and brown the chuck roast on all sides.
  • Add the sliced onion and minced garlic, cooking until softened.
  • Stir in dried oregano, dried basil, and red pepper flakes.
  • Pour in beef broth, Italian salad dressing, pepperoncini slices, and brine.
  • Lock the lid, set to high pressure, and cook for 40 minutes.
  • Allow pressure to release naturally for 10 minutes, then quick release the remaining pressure.
  • Shred the beef with two forks.
  • Serve the shredded beef on French rolls or hoagie buns.
  • Top with giardiniera and provolone cheese, if desired.

Notes

  • For extra flavor, toast the buns before adding the beef.
  • Adjust the amount of pepperoncini and red pepper flakes to control the spiciness.
