  • 1 large ciabatta roll or Italian bread
  • 4 slices salami
  • 4 slices capicola
  • 2 slices provolone cheese
  • 1 cup chopped romaine lettuce
  • ¼ cup cherry tomatoes, halved
  • ¼ cup cucumber, diced
  • ¼ cup red onion, finely diced
  • 2 tbsp banana peppers (optional)
  • 2 tbsp black olives, sliced
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  • Slice the ciabatta roll in half lengthwise and lightly toast if desired.
  • In a bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, banana peppers, olives, red wine vinegar, olive oil, Italian seasoning, salt, and pepper. Toss well to coat.
  • Spread the chopped salad mixture evenly on the bottom half of the ciabatta roll.
  • Layer salami, capicola, and provolone cheese over the salad.
  • Close the sandwich with the top half of the bread.
  • Slice the sandwich in half and serve immediately.
