  • 1 large sub roll or baguette
  • 4 slices salami
  • 4 slices capicola
  • 4 slices mortadella
  • 4 slices provolone cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup banana peppers (optional)
  • 2 tbsp mayonnaise
  • 1 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  • Slice the sub roll in half lengthwise and lightly toast it if desired.
  • Spread mayonnaise on the bottom half of the roll.
  • Layer salami, capicola, mortadella, and provolone cheese on the roll.
  • In a bowl, combine shredded lettuce, red wine vinegar, olive oil, Italian seasoning, salt, and pepper to create the grinder salad.
  • Add the grinder salad on top of the meat and cheese.
  • Top with tomato slices, red onion, and banana peppers.
  • Close the sandwich with the top half of the roll.
  • Slice in half and serve immediately.
