  • 1 tablespoon oil
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 pounds ground beef, browned, crumbled, and drained
  • ½ cup water
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 ¼ cups Bisquick mix or any baking mix
  • ⅔ cup water
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup sharp cheddar cheese, shredded and divided
  • 1 cup jack cheese, shredded
  • 3 Roma tomatoes, sliced thin
  • 1 (4 oz) can green chiles
  • Fresh cilantro, finely chopped (for garnish)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the oil over medium heat. Add the sliced onion and red bell pepper, sauté until softened.
  • Add the ground beef to the skillet, cooking until browned and crumbled. Drain any excess fat.
  • Stir in ½ cup water, chili powder, cumin, paprika, salt, and pepper. Simmer for a few minutes until well combined and thickened. Set aside.
  • In a medium bowl, combine Bisquick mix and ⅔ cup water to form a dough. Press the dough into the bottom of a 9x13-inch baking dish.
  • In a small bowl, mix mayonnaise, sour cream, and ½ cup sharp cheddar cheese. Spread this mixture over the dough.
  • Layer the cooked beef mixture evenly over the dough.
  • Sprinkle the jack cheese and remaining ½ cup sharp cheddar cheese on top.
  • Arrange the sliced tomatoes and green chiles over the cheese layer.
  • Bake in the preheated oven for 30-35 minutes or until the casserole is bubbly and the cheese is melted and golden.
  • Garnish with fresh cilantro before serving.

Notes

  • You can substitute ground turkey for ground beef for a leaner option.
