  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup fresh key lime juice (about 20-25 key limes)
  • 1 tbsp lime zest
  • Whipped cream for topping (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  • Press the mixture into a 9-inch pie dish and bake for 10 minutes. Let cool.
  • In a bowl, whisk egg yolks, condensed milk, lime juice, and zest until smooth.
  • Pour the filling into the crust and bake for 15 minutes, until set.
  • Cool to room temperature, then chill in the fridge for at least 2 hours.
  • Top with whipped cream before serving, if desired.
