This King Ranch Chicken recipe is a flavorful Tex-Mex casserole featuring layers of tender chicken, creamy sauce, spicy Rotel tomatoes, and melted cheese, all topped with crispy tortillas. Easy to prepare and perfect for weeknight dinners, this cheesy comfort food is sure to become a family favorite.

Ingredients

  • 3 cups cooked chicken (shredded)
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 ½ cups shredded cheddar cheese
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 12 corn tortillas (cut into quarters)
  • 2 tbsp butter or oil

Instructions

  • Preheat oven to 350°F (175°C).
  • Sauté onions and bell peppers in butter over medium heat until soft, about 5 minutes.
  • In a large bowl, mix Rotel tomatoes, cream of chicken soup, cream of mushroom soup, chicken broth, chili powder, and cumin.
  • Layer half of the tortillas in a greased 9x13-inch casserole dish. Top with half of the chicken, sautéed vegetables, soup mixture, and shredded cheese.
  • Repeat layers with the remaining ingredients, finishing with a layer of cheese on top.
  • Bake uncovered for 30-35 minutes, until bubbly and golden.
  • Let cool for 5 minutes before serving.

Notes

  • For extra heat, add diced jalapeños.
  • You can use flour tortillas if preferred, though corn is traditional.
