Lasagna Roll Ups are a fun and tasty twist on traditional lasagna, featuring layers of spinach, ricotta, and mozzarella cheese, all rolled up in lasagna noodles and baked with marinara sauce. This easy-to-make recipe is perfect for family dinners and special occasions.

Ingredients

  • 12 uncooked lasagna noodles
  • 1 (24 oz) jar of marinara sauce
  • 16 oz frozen spinach, thawed
  • 1 cup freshly grated Parmesan cheese
  • 15 oz ricotta cheese
  • 3 cups mozzarella cheese, divided
  • 1 large egg
  • 1/2 tsp salt
  • Pepper to taste
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp dried oregano
  • Fresh basil or chopped parsley (optional, for serving)

Instructions

  • Preheat oven to 375°F (190°C). Cook lasagna noodles al dente, then drain and lay flat on a baking sheet.
  • In a large bowl, mix together ricotta, spinach, 1.5 cups mozzarella, Parmesan, egg, garlic, salt, pepper, Italian seasoning, and oregano.
  • Spread a thin layer of marinara sauce on the bottom of a baking dish.
  • Spread a generous amount of the ricotta mixture onto each noodle, then roll up tightly.
  • Place the roll-ups seam side down in the baking dish, pour remaining marinara sauce over them, and top with the rest of the mozzarella.
  • Cover with foil and bake for 25 minutes, then remove foil and bake for another 10 minutes or until cheese is bubbly and golden.
  • Garnish with fresh basil or parsley if desired. Serve warm.

Notes

For added flavor, try using a blend of different cheeses, or add cooked ground beef or Italian sausage to the ricotta mixture.
