Lemon ginger cookies combine the bright citrus flavor of lemon with the warm spice of ginger, creating a soft, chewy cookie that's both refreshing and flavorful. These cookies are perfect for tea time or as a unique dessert.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 cup crystallized ginger, chopped

Instructions

  • Preheat oven to 350°F (175°C).
  • Cream together butter, sugar, and brown sugar until light and fluffy.
  • Add egg, lemon juice, and lemon zest, mixing until combined.
  • In a separate bowl, whisk together flour, baking soda, salt, ginger, and cinnamon. Gradually mix into the wet ingredients.
  • Fold in chopped crystallized ginger.
  • Scoop dough onto a baking sheet, slightly flatten each ball.
  • Bake for 10-12 minutes until edges are golden. Cool on a wire rack.

Notes

For extra lemon flavor, drizzle with a simple lemon glaze made from powdered sugar and lemon juice. Store in an airtight container for up to a week.
