This Louisiana Red Beans and Rice recipe is a flavorful Creole dish featuring tender red beans, smoky sausage, and spices served over fluffy rice.

Ingredients

  • 1 lb dried red beans
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 lb smoked sausage, sliced
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp cayenne pepper (optional)
  • 2 bay leaves
  • 6 cups chicken broth or water
  • 2 cups cooked white rice
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Rinse and soak red beans overnight. Drain and set aside.
  2. Heat olive oil in a large pot over medium heat. Sauté onion, bell pepper, celery, and garlic until softened.
  3. Add smoked sausage and cook until browned.
  4. Stir in thyme, paprika, cayenne pepper (if using), and bay leaves. Add beans and chicken broth.
  5. Bring to a boil, reduce heat, and simmer for 2-3 hours, stirring occasionally, until beans are tender and creamy.
  6. Remove bay leaves. Season with salt and pepper to taste.
  7. Serve over cooked white rice and garnish with green onions.

Notes

  • Adjust seasoning to your spice preference.
  • For a vegetarian version, omit sausage and use vegetable broth.
  • Serve with cornbread for an authentic Southern touch.
