For the Mashed Potatoes:

  • 3 pounds russet potatoes
  • Water (to cover potatoes)
  • 7 tablespoons butter
  • ¾ cup sour cream
  • ¼ cup milk
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • 1 cup cheddar cheese, shredded

For the Topping:

  • ¼ cup panko breadcrumbs
  • 1 tablespoon butter
  • 2 tablespoons chives, chopped
  • 5 strips bacon, cooked and crumbled
  • ½ cup cheddar cheese, shredded

Instructions

  • Peel and cut the russet potatoes into chunks. Boil in a pot with water until tender.
  • Drain and mash the potatoes with butter, sour cream, milk, garlic powder, and salt until smooth.
  • Stir in shredded cheddar cheese.
  • Transfer mashed potatoes to a casserole dish.
  • For the topping, melt butter in a pan and toast panko breadcrumbs until golden.
  • Sprinkle the breadcrumbs, chives, bacon, and shredded cheddar cheese over the mashed potatoes.
  • Bake at 375°F (190°C) for 15-20 minutes until the cheese is melted and the topping is crispy.

Notes

  • For a creamier texture, add more milk or sour cream as needed.
  • Use smoked cheddar for a deeper flavor.
