Delicious Meatball Stroganoff combines lean ground beef meatballs with a rich and creamy sauce made from mushrooms, garlic, and sour cream. Perfect for a hearty meal.

  • For the Meatballs:
    • 2 slices white bread, crust removed
    • 3 tablespoons milk
    • 1 pound lean ground beef
    • 1 egg
    • 1 tablespoon dried parsley
    • ½ teaspoon garlic powder
    • ½ teaspoon salt
    • ½ teaspoon black pepper
  • For the Sauce:
    • 1 tablespoon olive oil
    • 2 tablespoons butter
    • 8 ounces mushrooms, sliced (white or cremini)
    • 2 cloves garlic, minced
    • 2 ½ tablespoons all-purpose flour
    • 10.5 ounces condensed French onion soup or condensed beef broth*
    • ¾ cup water
    • ½ tablespoon Dijon mustard
    • ½ cup sour cream

Instructions

  • Prepare Meatballs:
    • Soak bread in milk until soft. Mix with ground beef, egg, parsley, garlic powder, salt, and pepper.
    • Form into meatballs and set aside.
  • Cook Meatballs:
    • In a large skillet, heat olive oil over medium heat. Cook meatballs until browned on all sides. Remove and set aside.
  • Make Sauce:
    • In the same skillet, add butter and sauté mushrooms until tender. Add garlic and cook for 1 minute.
    • Stir in flour and cook for another minute. Gradually add the condensed soup and water, stirring constantly until thickened.
    • Mix in Dijon mustard and sour cream. Return meatballs to the skillet and simmer for 10 minutes until cooked through.

Notes

  • For a lighter option, use Greek yogurt instead of sour cream.
  • Serve over egg noodles or mashed potatoes for a complete meal.
