For the Meatballs:
2 slices white bread, crust removed
3 tablespoons milk
1 pound lean ground beef
1 egg
1 tablespoon dried parsley
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
For the Sauce:
1 tablespoon olive oil
2 tablespoons butter
8 ounces mushrooms, sliced (white or cremini)
2 cloves garlic, minced
2 ½ tablespoons all-purpose flour
10.5 ounces condensed French onion soup or condensed beef broth*
¾ cup water
½ tablespoon Dijon mustard
½ cup sour cream
Instructions
Prepare Meatballs:
Soak bread in milk until soft. Mix with ground beef, egg, parsley, garlic powder, salt, and pepper.
Form into meatballs and set aside.
Cook Meatballs:
In a large skillet, heat olive oil over medium heat. Cook meatballs until browned on all sides. Remove and set aside.
Make Sauce:
In the same skillet, add butter and sauté mushrooms until tender. Add garlic and cook for 1 minute.
Stir in flour and cook for another minute. Gradually add the condensed soup and water, stirring constantly until thickened.
Mix in Dijon mustard and sour cream. Return meatballs to the skillet and simmer for 10 minutes until cooked through.
Notes
For a lighter option, use Greek yogurt instead of sour cream.
Serve over egg noodles or mashed potatoes for a complete meal.
