  • 1 packet taco seasoning
  • 1 cup fresh spinach
  • 1 cup corn
  • 1 can (15 oz) roasted tomatoes
  • 1 cup salsa
  • 2 cups shredded cheese (divided)
  • 2 cups cooked rice
  • 1 cup chicken broth

Instructions

  • Preheat your oven to 375℉. Spray a 9x13-inch casserole dish with cooking spray.
  • In a large skillet, cook the ground beef over medium-high heat for about 5 minutes, breaking it into crumbles.
  • Add taco seasoning and cook until the beef is browned and no longer pink.
  • Add spinach, corn, roasted tomatoes, and salsa to the skillet. Stir until combined.
  • Mix in half of the shredded cheese.
  • Add the rice and chicken broth, stirring until well incorporated.
  • Transfer the skillet contents to the prepared casserole dish.
