1 lb ground beef
1 packet taco seasoning
1 cup fresh spinach
1 cup corn
1 can (15 oz) roasted tomatoes
1 cup salsa
2 cups shredded cheese (divided)
2 cups cooked rice
1 cup chicken broth
Instructions
Preheat your oven to 375℉. Spray a 9x13-inch casserole dish with cooking spray.
In a large skillet, cook the ground beef over medium-high heat for about 5 minutes, breaking it into crumbles.
Add taco seasoning and cook until the beef is browned and no longer pink.
Add spinach, corn, roasted tomatoes, and salsa to the skillet. Stir until combined.
Mix in half of the shredded cheese.
Add the rice and chicken broth, stirring until well incorporated.
Transfer the skillet contents to the prepared casserole dish.
Cover with aluminum foil and bake for 45 minutes, or until the rice is cooked.
Remove the foil and top with the remaining cheese.
Bake for another 5 minutes or until the cheese has melted.
