  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 12 small corn tortillas
  • 1 can diced tomatoes with green chilies
  • 1 cup sour cream
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped cilantro (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • Cook ground beef in a skillet until browned; add taco seasoning, beans, salsa, and diced tomatoes.
  • In a baking dish, layer tortillas, beef mixture, and cheese.
  • Repeat layers, ending with cheese on top.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake an additional 10 minutes until cheese is bubbly.
