  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1 package (3.4 oz) instant coconut cream pudding mix
  • 1 1/2 cups cold milk
  • 1 cup shredded sweetened coconut
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 container (8 oz) whipped topping, thawed (like Cool Whip)
  • Additional shredded coconut for topping (optional)

Instructions

  • Prepare the Crust: In a medium bowl, mix graham cracker crumbs with melted butter. Press the mixture firmly into the bottom of a 9x13-inch baking dish. Chill in the fridge for 15 minutes.
  • Prepare the Pudding Layer: In a bowl, whisk together the coconut cream pudding mix and cold milk until thickened. Set aside.
  • Make the Cream Cheese Layer: In a mixing bowl, beat softened cream cheese with powdered sugar until smooth. Fold in half of the whipped topping until well combined.
  • Assemble the Layers: Spread the cream cheese mixture over the chilled crust. Then, spread the coconut pudding layer over the cream cheese layer.
  • Add Topping: Top with the remaining whipped topping and sprinkle shredded coconut on top.
  • Chill: Refrigerate for at least 2 hours before serving to allow layers to set.
