This No Bake Mint Chocolate Cheesecake is the ultimate dessert for mint chocolate lovers!   • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp mint extract
  • 1-2 drops green food coloring (optional)
  • 1 1/2 cups heavy whipping cream, whipped
  • 1 cup semi-sweet chocolate chips (melted and cooled)
  • Chocolate shavings or mint leaves (for garnish)

Instructions

  • Combine chocolate cookie crumbs and melted butter. Press mixture into the bottom of a springform pan to form the crust. Chill for 20 minutes.
  • Beat softened cream cheese and powdered sugar until smooth. Add mint extract and green food coloring, mixing until evenly combined.
  • Fold whipped cream into the cream cheese mixture.
  • Pour half of the filling over the chilled crust. Drizzle melted chocolate over the layer, then add the remaining filling. Smooth the top.
  • Refrigerate for at least 4 hours or overnight to set.
  • Garnish with chocolate shavings or mint leaves before serving.

Notes

  • Green food coloring is optional; you can omit it if you prefer a natural look.
  • Store in the refrigerator for up to 3 days.
  • For a firmer crust, freeze the crust before adding the filling.
